I've been telling everyone on Facebook for about a week now that I made homemade mint chocolate marshmallows, and I figured it was time to post about it. So here it is! I made marshmallows for the second time. This was the first time.
This time I used a different recipe, and I melted dark chocolate chips and mint chips, and drizzled them on top. Nestle has a limited edition product out for the holidays: Dark Chocolate & Mint Morsels, which are aaamazing. Buy and use them while you can!

How do you feel about the chocolate-mint combo? I think maybe either you love it, or hate it and think it tastes like toothpaste. Speaking of toothpaste... this is the part where I go off subject a bit... The other day I was brushing my teeth at the same time my sister was, and I noticed I was doing something odd. I was closing my eyes and brushing my teeth. I think I do this a lot, but wasn't aware of it. I abruptly opened my eyes and looked at my sister to make sure she didn't see me doing it. And guess WHAT? She was doing the same thing! Brushing her teeth with her eyes closed.
So is this a family-thing, or does anyone else do that?

Back to mallows. On this blog I create almost all of the recipes. I didn't feel comfortable enough to create my own marshmallow recipe, because marshmallows are an exact science and I didn't want to to mess them up. I used this recipe from Cooking Light, and followed it exactly, except I didn't use the coconut. Then I melted 2/3 cup dark chocolate chips and drizzled them on top, followed by 1/2 cup melted mint chips.

Making marshmallows aren't that difficult, but you do have to have patience and time to work on them. In a nutshell, what you do is make a hot syrup out of sugar and corn syrup, stir it into dissolved gelatin, then add that to a mixture of beaten egg whites and vanilla. You beat the mixture for a couple of minutes, then pour it into a baking dish and let dry for a couple of hours. The last step is coating the marshmallows in powdered sugar and cornstarch before slicing.
A homemade marshmallow is a rare treat, and worth the time and effort. So get busy!








Glad to see these Em after hearing all about them. They look delicious. I am a mint lover, so these would be perfect in my view. I don't think I close my eyes when I brush - but heck, I have never thought about it before!
ReplyDeleteThose look adorable, but now you have me wondering after that toothpaste comment! I made a chocolate cookie with peppermint extract but it was quite mild and the chocolate was strong. Hmmm. And I adore homemade marshmallows too.

Closing your eyes when you are brushing your teeth is probably normal, because who wants to look at the wierd faces you make as you do. Now I don't simply because I hold my head over the sink as I am brushing so as not to drool toothpaste all over.Now, these marshmallows do NOT taste like toothpaste I am sure of it!!!!

ReplyDeleteOh I love mint and chocolate together! I brush my teeth with my eyes open...i think...it's so weird like right now I am trying to picture what I do when I brush my teeth and I can't think of anything. Maybe I'm tired.

Great job on the marshmallows...although, I'm one of those people who thinks mint/chocolate is a terrible combination and tastes like toothpaste.

I close my eyes too, but usually only in the morning because I'm trying to trick myself into thinking that I can sleep and brush my teeth at the same time. Actually I can go through most of my morning routine with my eyes closed :) I love homemade marshmallows and while I'm not a huge fan of minty things, I might make a batch of these to take to work. These people are sugar fiends!

ReplyDeleteI actually have a few bags of the mint chocolate swirl chips in my pantry and I am debating on how to use them--never even thought of marshmallows!!!

I love the mint-chocolate combo. It's one of my faves! Your homemade marshmallows look delicious. I keep thinking I'll make them again, but I hate how sticky everything gets! I don't have that patience part down...
ReplyDeleteIt's weird. Sometimes I like chocolate mint combos and sometimes I don't. I really don't see what the hype is about those stupid GS Thin Mints, but I'll gladly eat a Peppermint Patty or an Andes candy. I'd rather have my chocolate with peanut butter, or hazelnut, or coffe or coconut or banana though.

I totally brush my teeth with my eyes closed. And actually, I 90% of the time I'm in the shower I have my eyes closed. Maybe it's something to do with being in the bathroom...
