Mini Chocolate Chip Turtle Cookies


I went shopping with my mom today and it was fabulous! She's the best person to shop with. She's ever-so-patient and can shop all day long. Mom also knows where to find the best deals.
Did I forget to mention she does the driving when we go shopping, and keeps me entertained with stories? She's a gem, I tell ya.

We shopped and looked around for townhouse stuff for me, but we both ended up buying clothes instead. :D You can't pass up the good deals at Marshalls. Have you ever checked out their gourmet food section in there? It's amazing.


So the list of what I need for the new place isn't too bad. Eric actually already has a lot of the stuff that would be necessary. Thank youuuu! He has furniture and everything! What a man. I have a few things I will be contributing myself.

Umm, I have a KitchenAid mixer - whoo! I bet he'll love using that. I have an unused blender I won in a contest. I have wine glasses I won in a contest. So if he wants to make a margarita or have a glass of pinot, he's all set.

I do have a few things to buy. In order of importance:
-Espresso machine
-Bed frame. Mattress? (Is a fifteen year old mattress too old?)
-Rugs
-Bookshelf
-Picture to hang over the electrical panel in my room.
-Various pots and pans, dishes, cups, etc.

I'm sure there's so much more, I just haven't thought of it yet. My main concern is the espresso machine. I don't know what would happen if I didn't have an espresso machine.
Something bad would happen...




The days ahead will be stressful with moving and buying things, but I know something that will make me feel better. Cookie baking and cookie eating.

Cookies are my favorite things to bake, except for pies, maybe. I made these mini cookies the other night. They're Mini Chocolate Chip Turtle Cookies, and they're like chocolate chip cookies except they have pecans and mini chocolate chips in the batter and are topped with caramel.

Mini Chocolate Chip Turtle Cookies 


Ingredients:
  • 1/2 cup unsalted butter
  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup lightly packed brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/2 cup finely chopped pecans, toasted
  • Melted caramel, for drizzling
Instructions:
Melt butter in a small saucepan over medium heat; cook for 3-4 minutes, stirring frequently, until butter browns and starts to foam. Remove from heat to cool.

In a medium mixing bowl, sift together flour, baking soda and salt. In a large mixing bowl, using a mixer on medium speed, beat together melted browned butter, brown sugar and granulated sugar until creamy - about 1-2 minutes. Beat in egg and vanilla until combined. Reduce mixer speed to low and gradually beat in flour until just combined; stir in chocolate chips and pecans until combined. Chill dough in the refrigerator for 30 minutes.

Heat oven to 350 degrees F. Coat cookie sheets with cooking spray.

Roll dough into balls (about 2 teaspoons per ball), place on cookie sheets, and flatten using the palms of your hands. Bake 8 minutes or until set and light golden. Cool on wire racks. Drizzle with melted caramel.

I love the gourmet food section at Marshalls! I always can't decide on what to buy, so I end up buying nothing except for those ginger people candies!

    I'm sure you already know this, but you can get some really awesome kitchen stuff at TJ Maxx. The name brand stuff. And I bought the cutest kitchen towels and dish cloths there after Christmas. Green, orange, mustardy yellow colored--I think they were Kitchen Aid.

  13. That caramel drizzle is causing major swoonage. I love turtle stuff.

    Marshalls is my best friend. I do love their gourmet food section. I want to buy everything in it sometimes. I just feel guilty about the time I bought a cheap box of Guylian chocolates there as a Christmas thank-you gift and forgot to take off the Marshalls price tag that announced I had bought it from the Marshalls bargain bin. Oh well. Those shell-shaped chocolates with the hazelnut filling are darned good no matter how little you pay for them.

  22. I think after you move in to your new place you'll discover a whole bunch of little things that you need (at least that's what happened to me). Things like a good flashlight, refrigerator magnets, those clips that keep potato chip bags closed, a paper towel holder, light bulbs....

  24. I'm pretty sure I heard once that you spend 1/3 of your life on your mattress (haha that just doesn't sound right when written out...:)
    Anyway, you should get a new mattress. Sleep comfortably.

    Now these cookies look awesome. I need to do something baking today and have yet decided what I'm going to make. This variation on the normal chocolate chip cookie will be great :)

  25. I just recently discovered Marshall's and fell in love with it! (except for maybe their clothing section) I bought some cranberry orange pancake mix, german chocolate cookies and crazy shaped, multi-colored pasta, plus a bunch of other random stuff for so cheap. I might go there today now that you mentioned it!

    I really want to make your mini cookies, but need to buy some mini chips first. I hope the store has them!

    Most people would say 15 years is too old for a mattress but I'm sure that mine at my parents' is that old! If you like the way it feels and see yourself "needing" to buy a different one in the next couple of years (different size, etc) maybe wait.

  35. Long time, no read. I am glad to be back reading blogs again and I really need to be better about updating my own. But that baby of mine is soooo cute, I just don't mind being a slacker.

    So, my reason for commenting is 15 years is way too old for a mattress. Apparently on average each year a mattress absorbs 5 POUNDS of dead skin cells. Five per year. So 5 times 15 is 75 POUNDS of dead skin cells.

    I didn't know this fact until after college. I was sleeping on a really, really, really old mattress topped with 2 egg crate mattresses because it was given to me by family and it was, well, free. So...at the risk of grossing you out and perhaps leading you to never read my blog again, I will admit the mattress was something like 30 years old. 30 times 5 is just so incredibly gross that I took many dollars from my nearly empty newly college graduate checking account a bought a new set. I felt much better afterwards and slept much better too.

    10 years later, I am a married woman and my hubby and I just bought a bigger (king size- hurray!) set. There are GREAT deals out there and you by no means have to spend an arm and a leg. Let's face it, you need that money for baking/cooking gear- the really important stuff. :)

    So, as I'm reading your posts backwards, I get it, you're moving. Fun times. We're in the boat, too, sort of. Wait til you have a house to sell first and you have to clean up all of Erik's stuff first! Sigh. jk
    I've been leaving cookies for all the realtors and people coming to see our house and I'm going to try these cookies next.
