White Chocolate-Almond Blueberry Blondies


I t feels like such a long time since I've posted a baking recipe. I really haven't had much time for baking lately, because I've been busy! That makes me sad. I must change that soon.

I've been preoccupied with bigger issues.

Like, which laundry detergent to buy. When you moved out on your own, how did you know which kind to buy? Did you stick with what you used growing up?

I texted my mom and asked what a good brand was. She never replied back. I hope she's okay. Mom? Mom?

She must be on Facebook.



Are you a Tide fan? Or maybe you prefer Gain? Clorox? Arm & Hammer?

I went with All - it's allergy & dye-free. It seemed like a good decision to me. I have sensitive skin. Like a baby.

I have so many decisions to make now.
What kind of dish soap to buy?
Should I buy 2-ply toilet paper?
Do I buy Bird's Eye frozen vegetables on sale, or do I not? I mean, two for four dollars, that's a steal, right? But the bags are so small. I dunno, Bird's Eye.



Slowly but surely, I'm finding my way.

Things I have learned on my own:
-Don't buy Great Value plastic wrap because there's no way to cut it on the box easily.
-Don't buy Triscuits. Because you'll eat the box and drink a bottle of wine instead of cooking dinner.
-I need a salad spinner. I can't live without a salad spinner. And a magnetic knife strip. And a mini food processor.

It's time to have a housewarming party, I think.

And now, I present to you, White Chocolate-Almond Blueberry Blondies. Think about that for a second. Let it settle into to your head. Buttery, lemony blondies with sweet blueberries, creamy white chocolate, and toasted almonds in them.

Oh my gosh! I need some of these right now! Nom nom nom.

White Chocolate-Almond Blueberry Blondies

2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup finely chopped sliced almonds, toasted
10 tablespoons unsalted butter, softened
1 1/4 cups granulated sugar
2 teaspoons finely grated lemon zest
2 tablespoons lemon juice
1 teaspoon almond extract
1 large egg
4 ounces white chocolate, coarsely chopped
1 1/4 cups blueberries

Preheat oven to 350 degrees F. Line a 13x9-inch baking dish with foil; coat foil with cooking spray.

In a medium mixing bowl, sift together flour, baking soda and salt; whisk in almonds. In a large mixing bowl, using a mixer on medium speed, beat together butter and sugar until creamy - about 1 minute; beat in lemon zest and juice, almond extract and egg until combined - about 1 minute. Reduce mixer speed to low and beat in flour mixture until combined; stir in white chocolate and blueberries until combined.

Spread batter into dish and bake 30 minutes or until golden brown. Cool completely before lifting foil out of pan and slicing into bars.

Makes 24 bars

  1. So funny! I called my mom asking what detergent to buy the first time I moved in alone too--there weren't any parents on facebook at the time, but now she would probably be too busy commenting on status updates to give me an answer!

    Your blondies look SO good--I've been thinking about a recipe for lemon blondies with candied lemon rinds and some kind of curd swirl...white chocolate would be a good add-in!

  2. Those blueberry bars look wonderful! Someone should write a book answering all those questions you have! Everyone starting out on their own needs to know the best plastic wrap! Instead we try them all, disappointed, until one day, you pick up some Stretch-Tite and Costco and never look back!

    1) Don't buy plastic wrap at all - is it just me, or is it always hard to cut and never sticks to anything but itself? Press n Seal all the way, baby (I'm a convert.)
    2) I love my salad spinner - and I actually used to think, "whoever needs one of those is totally lame." (that's before I knew what they were for!)
    3) And the blondies look delish, as usual :)

  8. holy mama, these are just what i need. i just got the very berry coffee cake from starbucks (only bc it was free pastry day) and am feeling unsatisfied. your picture alone has satisfied me, so thank you. i loooove blueberries and i love blondies. what a combo!! i seriously need to make these. and i use All too...except the last detergent i bought was target brand bc it was on sale. i swear it's not getting my stains out!!

  9. Don't buy 2-ply toilet paper. According to my ex-landlady, whose father was a plumber, you run a bigger risk of clogging the toilet. A roll of Scott tissue lasts forver too. Yes, you do use more at one time than you would one of the soft brands, but the roll still lasts longer than any other brand on the market.

    I like Arm & Hammer and Seventh Generation laundry detergents 'cause they're greener and all that and I'm a politically correct kinda gal. Also like Method or Seventh Generation dish soap.

    I'd also like some of those blondies please!

    BTW, my mother watched URS and read my blog and said you looked like a "young Goldie Hawn". I wonder why she said young Goldie Hawn rather than just saying you look like Kate Hudson.

  14. Oh, man, those look super nummy! I remember buying everything my parents did when I moved out on my own. But when my husband and I moved in together, we started having to compromise on the stuff we bought... he liked All, I liked Tide, things like that. Eventually, though... you'll start figuring out the brands you like. Don't be afraid to experiment! :)

  17. My little sister did a science fair project on which detergent works best...and she found out that Wisk was awesome. I've been using it ever since.

    Never skimp on toilet paper. Another important lesson I learned after moving out on my own. Stick with the good stuff...it's quilted for a reason! :)

    I'm a Tide fan, all the way (they make a dye and fragrance free version too).

    I usually get the cheap dish soap, but recently bought Dawn because they donate a dollar to animal charities for each bottle bought.

    I recently bought hippie toilet paper at Whole Foods - it's like medium-grit sand paper. Not fun.

    Agree on the Triscuits.

  25. Ok...having lived on my own for nearly 6 years now, (CRAZY. I just realized how long that seems...granted 2 of them were in dorms...but still) I've come to learn a few things:

    I always try to get eco-friendly laundry detergent, and the cheapest is usually Method. They smell great too!

    Dish Soap - I usually go with natural stuff as well and get whatever is on sale: Method, Dr. Bronners, Seventh Generation, Mrs. Meyers. There ya go. There's a 'healthy' section in Target with all of the good brands like this...

    YES. Buy 2 ply. Anything better than this is just silly, but 2 ply is just a much needed amenity. I mean, you don't want to feel like you are in a public restroom at some gross stall, do you?

    I am so bad at math, but I have gotten really good at looking at an item's value at the grocery store. There is always a little number on the item's sticker (the one with the barcode, on the shelf) that will tell you how much an item is per unit. It is usually in cents, like 3.8, or whatever. Then you can look at another item on the shelf (say, another bag of frozen peas, but bigger bag for more) and you can look at that price sticker...let's say 3.4. Now you know that even though you are paying more for the larger product, it is REALLY a better deal (but not by much).
    Here's an example: I was just at the grocery store yesterday and needed gatorade for the bf. There were the smaller bottles (8 for $5) or the larger bottles, which were $1 each. I didn't know really which was a better deal, so I looked at the price per unit/ounce sticker on the shelf and found out that they were actually the same exact price! I live off of these little stickers when I'm at the grocery store...everyone should. THey are right below the item, on the sticker that says how much the item is. It's usually just to the left of the barcode, in the bottom left corner. It will say 'price per unit' or 'price per ounce' and is often in it's own little yellow box on the sticker. When something goes on sale and there is a sale tag below that sticker, the sale 'price per unit' will be on the sale sticker attached.

    6. Break the bank and don't mess with the mini food processor - get the Cuisinart that has the nested mini bowl inside of the big bowl. With all the cooking you do, it's the only way to go.

    As far as detergent goes, I went with what smelled good haha. I also fall for cheesy commercials and marketing tactics, so I go for the products that have the most convincing ads. Terrible, I know!

    when deciding what detergent to use for washing my baby's clothes, i came across country save: www.countrysave.com. i chose it mainly b/c it is free of enzymes, brighteners, dyes, fragrances and softeners PLUS it's a high efficiency detergent.

    this chart is geared toward cloth diaper washing but it's a good way to compare most major brands of detergent. all free + clear gets 3 stars outta 4 ;)

  42. Skimp on EVERYTHING but toilet paper. Always 2 ply. 3 ply is even better.

    Live on spaghetti-os and saltines, but NEVER skimp on the TP.

    That said, these blondies look amazing and I am so happy I have room in my budget for all of the ingredients! YUM!

  43. Oh yuummmy! looks good! have fun buying new kitchen stuff! if you get Bed Bath and Beyond gift cards, bring lots of those coupons they mail out...they still take the expired ones and you can use multiple coupons at once! I always get coffe k-cups there.

  51. I have a really hard time buying toothpaste and toilet paper. I stand in that aisle forever. It's ridiculous. I will say that I've found if I can find a coupon for Quilted Northern I usually buy it- its super soft and lasts much longer than any other brand.
    I buy the Walmart brand of dishwasher soap because it's cheaper and works just as well. Don't forget the gel stuff that makes your dishes sparkly- I did and my wine glasses were smudgy for months after.
    As for laundry detergent- I usually visit Big Lots or Family Dollar when I have a coupon and then hope they already have it on sale (budget budget budget!!)
