
S ooo, I just spent the last three hours working on a pie recipe. A grasshopper pie recipe.
I wanted to make a grasshopper pie for my mom, seeing that it's mother's day and all.

I love my mom so much. She is really the sweetest, genuine, most positive person I know. I'm so thankful to have her in my life. This mother's day is even more significant this year. I don't want to go into details, but my mom had a bit of health scare this past year. It was pretty serious and I'm so glad she is okay. She is one strong woman! I love you mom!
Anyway, I love the mint/chocolate combo and so do my mom and sisters. We're having a little mother's day gathering and I'm bringing the grasshopper pie. I think it'll be good... I made up the recipe myself. I'm not sure if I'm ready to post it yet though, because I think it needs work. It was too complicated and I know I can make it easier. NO I did not use marshmallow fluff in the recipe. I used gelatin and I made a custard and UGH it was too complicated. Also, I think I pulled a muscle in my neck. I can't move at all. Baking can be very, very dangerous.
Hopefully mommy will like her grasshopper pie.

These Chocolate White Chocolate Chip Macadamia Cookies kind of look like they might have some mint flavoring going on in them, don't they? That's my mistake. I shouldn't have used a green background. Oh dear.
These do not have mint in them. They have chocolate. Sweet, sweet delicious chocolate. And white chocolate chips. And toasted macadamia nuts. Ohh yess. I'm all about the macadamia nuts.

Chocolate White Chocolate Chip Macadamia Cookies
2 1/4 cups all purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 1/4 cups granulated sugar
1 1/2 teaspoons vanilla extract
1 large egg
3 ounces semisweet chocolate, melted
3/4 cup finely chopped macadamia nuts, lightly toasted
3/4 cup white chocolate chips
Preheat oven to 350 degrees F. Coat cookie sheets with cooking spray.
In a medium mixing bowl, sift together flour, cocoa, baking soda, baking powder and salt. In a large bowl, using a mixer on medium speed, beat together butter and sugar until creamy - about 1-2 minutes. Beat in vanilla and egg until combined - about 1 minute. Beat in melted chocolate until combined. Reduce mixer speed to low and gradually beat in flour mixture until combined. Stir in macadamia nuts and white chocolate chips until well incorporated.
Take heaping tablespoons of dough, roll into balls, and place on cookie sheets, spacing about an inch apart. Bake for 9-10 minutes or until set, and cookies look crinkly. Transfer to wire racks to cool.
Makes 28 cookies

I've never eaten grasshopper pie, buy I think I'd like it. I have, however, eaten these cookies and I totally give them two thumbs up! Can't wait to make them myself. Got my macadamia nuts this weekend. I also was thinking about using a dark cocoa in them.
