White Chocolate Cheesecake Sandwich Cookies with Raspberry Buttercream

Hello there!  Welcome back!  I have to tell you, it’s really late right now.  I spent most of the night making cake pops.  That was the most work I’ve ever put into cake pops.  I’m going to enter them into a contest tomorrow, and then I’ll show them to you.  You’ll be confused when you see them, but I’ll explain.  Anyway, instead of me talking during this blog post, how-abouts you talk? 

I have ten random questions for you guys, and I’d love to hear your answers.  If you’re not too busy, of course.  I want to get to know you better!  I think they’re kinda fun.  I might answer them myself in the next post.  I love, love reading your comments. I appreciate them very much.

Please enjoy this White Chocolate Cheesecake Sandwich Cookie with Raspberry Buttercream!  They’re great!  The cookie is made with butter, cream cheese, vanilla pudding mix, melted white chocolate and ground almonds.  Very flavorful, very soft.  The filling is made with butter, powdered sugar, marshmallow cream and pureed raspberries.

Bonus: it’s actually two cookies in one.

Now go do what you’ve always wanted to do!  There’s no time like today.

White Chocolate Cheesecake Sandwich Cookies with Raspberry Buttercream

1/2 cup unsalted butter, softened
1 (8-ounce) package cream cheese, softened
3/4 cup granulated sugar
1 package instant vanilla pudding mix
1 large egg
1 teaspoon vanilla extract
1 cup white chocolate chips, melted
2 teaspoons baking powder
1/4 teaspoon salt
2 cups all purpose flour
3/4 cup ground toasted almonds
1/2 cup confectioners' sugar

Raspberry Buttercream
1 cup frozen raspberries, thawed
1/2 cup unsalted butter, softened
1 cup confectioners' sugar
1 cup marshmallow cream
1/4 teaspoon almond extract

In a large mixing bowl, using a mixer on medium speed, beat together butter, cream cheese and sugar until creamy - about 1 minute.  Beat in pudding mix, egg and vanilla until well combined - about 1 minute.  Beat in white chocolate, baking powder and salt until well combined.  Reduce mixer speed to low and beat in flour and almonds until just combined.  Chill dough in refrigerator for 30-45 minutes, or until firm.
Heat oven to 350 degrees F.  Coat cookie sheets with cooking spray.

Roll heaping tablespoons of dough into balls.  Roll and coat balls in 1/2 cup confectioers' sugar.  Place on cookie sheets, spacing about an inch apart.  Lightly press down on cookies to flatten.  Bake cookies 12-14 minutes or until light golden around the edges.  Cool 2 minutes before transferring to wire racks to cool.

To make the raspberry buttercream, puree raspberries in a food processor.  Add seedless raspberry puree to a large mixing bowl.  Using a mixer on medium speed, beat in butter and confectioners' sugar until creamy - about 1 minute.  Beat in marshmallow cream and almond extract until well combined - about 1 minute.  Spread buttercream on cookies and make sandwiches.

    What music are you digging right now? Hahaha. I've been listening to Beyonce's "Love on Top" and Martina McBride's Greatest Hits album nonstop for a week now.

    What’s the last cookbook you read? The Italian Baker, by Carol Field. I just got it from the library last week, and I think I'm going to have to purchase it.

    What’s something you’ve always wanted to do and haven’t done yet? A lot of things. I'll just list a couple: Be a contestant on Wheel of Fortune, and ride in a hot air balloon.

  5. First and foremost, LOVE reading your blog...always makes me want to bake! :) Here are the answers to your questions:
    1. I can't keep ice cream around the house because I eat it too much!
    2. Favorite classic movie would have to be Top Hat with Fred Astaire and Ginger Rodgers.
    3. I don't know if this is really a trend, but I don't get why there are so many different types of salt available.
    4. I miss not having to worry about paying rent. :)
    5. I haven't had breakfast yet, not sure what I will have! :)
    6. I am good at spelling and bad at math.
    7. I don't even know if they sell them anymore, but one thing I miss from being a kid are treats called Dunkaroos. They were kangaroo-shaped cookies and you could dip them in a little container of chocolate frosting that came with the cookies.
    8. I recently discovered The Bodeans and am currently loving their music!
    9. Latest cookbook I read was Mile High Cakes.
    10. I've always wanted to visit all 50 states and haven't done that yet...I'm not even half done yet!

    Define classic. Some of my favorite movies are well over 20 years old like Harold and Maude (cult classic anyway), the Princess Bride, and A Room with a View. I love Star Wars.

  39. What can't I stop eating? Peanuts. I buy a bag and eat.them.all. Sometimes, I cover them in cracked black pepper and eat. them. all. No biggie...except that that's a lot of peanuts.

    Classic movie? The Godfather.

    Food trend I'm sick of? Well, I see a lot of cupcake bemoaners here. Personally, I don't even like cake, but I appreciate the versatility of cupcakes. It's those little "cakepops" that I find to be a stupid waste of sugar and butter.

    What do I miss from childhood? Playing, with imagination and total abandon, in public and all the time.

    Breakfast? A nanner and peanuts.

    Good at? Taking care of people and cooking. Bad at? Motivating myself to write, freelance style.

    Food I miss?? Grilled cheese and tomater soup. mmmm. I always forget how good it is.

    2. I actually borrowed it from the library! It was interesting to read about the science behind baking, but now I find myself wishing I had a copy. It is expensive, but it'd probably be worth it for you since you create so many recipes.

  48. Well, first I want to say that your cookies look beautiful and awesomely yummy! Gotta try soon, I'm thinking that they are out of this world with both cream cheese and vanilla pudding mix in them.

    One food that I can't keep around the house without constantly knawing it is kettle corn - a bowl of that with a glass of wine....the perfect snack - really!

    This might sound hokey, but my favorite classic movie is John Wayne's McKlintok, he was my "hero" when I was a kid.

    The one food trend that I'm completly sick of is cupcakes. But hey, I'm not a cake person!!!!

    Something I miss from being a kid is being able to jump on the horses after school and just riding all over the hills without a care in the world.

    During the week, my favorite breakfast is a Spirutein shake with a handful of almonds.......love it!

    Something I'm good at....cooking, something I'm bad at......remembering what's on my "to do" list.

    The food that I miss the most is chicken fried steak with gravy over it......don't know why I don't just cook one up either.

    The music I'm totally in love with now is Lady Antebellum (I'm really starting to sound like a hick from the sticks now).

    The last cookbook I read, "Everything Glycemic Index" very interesting facts in there and I'm thinking that's got to be a good road to be on.

    Something I've always wanted to do and haven't is to visit Italy, Tuscany to be more specific. I would love to visit the wineries and the restaurants for authentic italian cooking.....YUM!

    I don't know if it falls into the classics range yet, but I love The Big Chill. Great soundtrack.

    Yeah, the usuals like cupcakes and cake pops. But I am also bored of homemade marshmallows.

    That cozy feeling of being tucked into bed and hearing your parents on the other side of the door. Feeling 100% safe.
