St. Patricks’ Day is coming up pretty soon, but I’m giving you plenty of time to get this brownie pie made. You could make it a couple of times if you want to. I might make it a couple more times, because I really love brownies.
St. Patrick’s Day isn’t one of my favorite holidays. I don’t dislike it. I mean, I like wearing green and eating shamrock sugar cookies, but I’m not one to hit up all of the bars at the pub crawl. No thanks. I’ll just sit at home and watch Bethenny Ever After and eat brownie pie.
I know, I’m pathetic. I don’t care anymore. So what if I like to stay at home and read food blogs in purple sweatpants? That sounds like fun to me. Having fun is being comfortable. I was thinking today, why are we not wearing sweatpants all of the time? Wouldn’t we all be much happier?
Sweatpants in the workplace. Let’s get this petition started. I know I can find some people at Walmart who’ll sign it.
What we have here is a chocolate butter shortbread crust, topped with a chewy and crusty brownie filling. The brownie part is made with melted milk chocolate, cocoa powder, eggs, sugar, salt, flour, butter, corn syrup and Bailey’s! I actually used this Bailey’s Coffee Creamer, but I encourage you to use the liqueur; it’s more fun that way. You can make Bailey’s milkshakes to pair with the brownie pie.

Speaking of milkshakes, I’ve never had a Shamrock Shake. Should I try one?
Bailey's Brownie Pie
1 cup ground entertaining cookies (or something similar... some kind of chocolate dipped shortbread would work)
2 tablespoons unsalted butter, melted
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup Bailey's Irish Cream liqueur or coffee creamer
1 large egg
1 tablespoon corn syrup
1 teaspoon baking soda
1/2 teaspoon salt
1 cup milk chocolate chips, melted
1/2 cup unsweetened cocoa powder
1/2 cup bread flour
Heat oven to 350 degrees F. Coat a 9-inch cake pan or pie plate with cooking spray.
In a medium bowl, mix together cookie crumbs and melted butter until well combined; press into bottom of pan.
In a large mixing bowl, using a mixer on medium speed, beat together softened butter and sugar until creamy - about 30 seconds. Beat in Bailey's, egg, corn syrup, baking soda and salt until well combined. Reduce mixer speed to low and beat in melted chocolate, cocoa powder and flour until just combined. Scrape batter onto crust. Bake 25-30 minutes. or until well risen and edges are crispy. The center will still be a little wobbly. Cool on a wire rack until ready for serving.

I've never tried a Shamrock shake either....wonder what it tastes like? Sweatpants at work. That would be awesome slash unprofessional looking. But I'm down if everyone else is. :)

ReplyDeleteI hadn't tried a Shamrock Shake until last year, and I was excited because everyone says they are so good, but boy was I disappointed. It tasted like toothpaste. The mint flavor was almost fake tasting, like there was too much syrup. And I love me some Andes mints, too! But, you should definitely try one for yourself. You might love it!
Yeah a couple of people have said that. I like mint stuff though. Maybe I'll like it?
DeleteI love brownies in pie form. Mainly because a slice of pie is roughly equal in size to 2 brownies, so you can eat more without feeling like a pig.

ReplyDeleteWhen I was a child, I used to love Shamrock shakes. I had not had one in years and then tied one as an adult...big disappointment..not at all as I remembered. I love the concept...creamy, thick ,minty drink. Last year I saw a recipe on a food blog for home-made Shamrock shakes. I thought I saved it but can't find it . Guess I will just have to try reproduce it myself. You have me craving one now that you mentioned it!!

ReplyDeleteShamrock shakes are a must! I simply put together mint chocolate chip ice cream with a bit of milk into a blender and...WHIRL! Top with whipped cream and chocolate sauce. Minty-chocolate deliciousness in a cup. That's my favorite version. :)

ReplyDeleteI remember having Shamrock Shakes as a kid. I tended to demand them every spring when they came out. I don't even remember what they tasted like. I think I loved the novelty, but it wore off after a few years.
I dream St. Pat's day this year. It's on a Saturday this year and I know the evil horrid hellhole disguised as a restaurant known as Molly Spillane's will be holding a no-holds-barred, super noisy, drunken nightmare orgy that will likely spill into the entire neighborhood. I will definitely be holing up in my apartment watching something warm and fuzzy and easy. I will probably still drink Baileys though.

DeleteI haven't eaten McDonald's in more than ten years--at all--but as a kid I loved it. Yet I think I only had the Shamrock Shake once. Its appeal was mainly as a novelty item, because it was seasonal. That pie looks fantastic! I'm not a big mint chocolate person, so it's nice to see other flavors used to celebrate St. Patrick's Day.
