I wasn’t expecting to blog about these bars… honestly, I wasn’t sure if they’d be any good. I had some goals when I made these: make a healthy snack bar, use up a can of pumpkin, and use up a box of raisins. I have no trouble using up cans of pumpkin, but raisins are trickier. I don’t really eat them unless they’re in cinnamon raisin bread or maybe an oatmeal cookie.
I kind of went with an Indian theme with the flavors. I used a bit of coconut oil, ginger, cinnamon, oatmeal and toasted cashews. Do raisins fit with the theme? Eh ? Maybe, maybe not.
You can have a healthy, nutritious snack in no time if you bake these. They’re delicious!
