Mmm brownies! They are definitely one of my favorite treats. Pretty much every time I’m thinking about what I want to bake, brownies come up. Then I have to tell myself, NO – I have too many brownie recipes as it is.
But I don’t have a brownie recipe with a pumpkin-cream cheese swirl, do I now?
The weather in St. Louis is a lot different than the water in Clearwater Beach, Florida. It was fifty degrees today. Quite a change from the 80 degree weather we experienced last weekend at the beach. Eric and I flew down for three days and soaked up the sun to celebrate our five year Halloversary.
All we did for three days was hang out on the beach, swim, fish, and relax.
And watch the sunset.
I tried fried grouper for the first time in these tacos. They came with pico, cheese and sour cream. They were pretty good. The grouper was fresh and delicious. I think I would have preferred it not in a taco,
though. I don’t think I really liked the fish mixed with sour cream/cheese.
Eric and I split this huge blue margarita. Mmm! It was gigantic.
You must have ice cream on the beach, right? Eric had banana pudding ice cream and I had almond joy and mint chocolate chip. Oh myyy.
Notable activities: playing skee ball in the hotel game room.
And catching sand crabs at night. Hello, little fella!
It was a fun trip. I’m missing the Florida heat today.
Back to the brownies. You will really enjoy these if you like chocolate and pumpkin together. It’s a basic, soft chocolate brownie with a spiced pumpkin cream cheese swirl. I topped the brownies with Pumpkin Spice M&M’s (optional of course, but I liked them).
Make these if you’re not sick of pumpkin desserts yet. I’m not! I made pumpkin chocolate chip bars last night and they really hit the spot. Not as good as ice cream on the beach, though.
