Mini M&M Cookies

Mini M&M Cookies Today’s holiday cookie is a classic: M&M cookies!  Everyone loves these.  These were really good… soft and buttery.  I used mini M&M’s and made mini cookies!  They were really cute, but eventually I got sick of making tiny cookie balls and made giant M&M cookies with the remaining dough.

I love the crackles!

Today I started my Christmas shopping and finished my Christmas shopping.  I think.  I went to the mall and it was horrible.  It was sooo busy and I searched for a parking spot for thirty minutes.  It was a stressful day.  Especially having ten Bath & Body employees ask me if I needed help.

Anyway, I hope you add these to you holiday cookie collection!  I baked three dozen cookies last night and I’m thinking about making more….

To be continued.

Mini M&M Cookies

Ingredients:
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1 large egg
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 2/3 cup bread flour
  • 1/2 cup (or more) mini M&M's
Instructions:
In a large mixing bowl, using a mixer on medium speed, beat together butter, sugar, vanilla and salt until creamy.  Beat in egg until combined.  Sift in baking powder, baking soda and flour, and beat on low speed until just combined.  Stir in M&M's until just combined.

Chill dough in freezer for 30 minutes.  Heat oven to 350 degrees F.

For mini cookies, shape teaspoons of dough into balls and place on a cookie sheet, spacing about 3/4 inch apart.  For larger cookies, shape rounded tablespoons of dough into balls and place on cookie sheets spacing about 1 inch apart.  Bake 10 minutes for minis, 14 minutes for larger cookies, or until light golden around edges.

  2. That's just not right!! Nobody is allowed to be finished their shopping yet - it's only the 18th! Lots more time ;-D

I know what you mean about the mini cookies getting tedious after a while although they are great for the kids. Even if they would prefer a mega cookie!
